Omelet from sweet potatoes is an ideal choice for breakfast, especially if a busy day awaits you
Breakfast is a very important meal – it can either make or break your day. Aside from the fact that it is very important to eat something in the first hour after waking up, it is just as important what it will be.
Breakfast gives us a chance to start the day in a healthy way. This provides the necessary minerals and vitamins, controls blood sugar levels, maintains a healthy body weight and has more energy.
Basically, a healthy breakfast should contain whole grains, protein, as well as fruits and vegetables. Below we present you an example of a healthy and balanced first meal during the day.
Omelette with sweet potatoes
Potatoes sweet potatoes pre-baked in the oven
3 tablespoons green soy (edamame)
Chopped avocado av
1 spring onion
. Tablespoon turmeric
1 teaspoon olive oil
2 larger eggs
pepper, to taste

How to prepare
1. In a bowl, mix sweet potatoes, soy, avocado, chopped onion, turmeric, salt and pepper.
2. Heat the olive oil.
3. In a separate bowl, beat two eggs and pour into the pan, stirring gently.
4. After 25 seconds, remove the pan from the heat, add the other ingredients and return to the plate.
5. Bake for another half minute on each side.
You can serve this omelette with your favorite sauce or seasonal salad. Our recommendation is to enrich this delicious meal with tomato and cucumber salad. Of course, it is always a good decision to “green” breakfast. In this case, we recommend arugula or lettuce. And if you are not going anywhere, spring onions are always a good idea
Tip plus: For maximum softness of the omelette, beat again before adding the eggs to the pan. This will make the omelette softer and more airy.
