When you think of crispy chicken, you probably come up with images of fast food, fried foods, fried snacks that are rich in healthy fats. But, this recipe will convince you – not only is it possible, but it is also very simple, to cook a crispy chicken with few carbohydrates.

This dish is not only simple, it can also be part of your menu if you are on a low carb or low carb diet. The aromas of this dish from sweet cherry tomatoes and unbearable thyme are inspired by Mediterranean cuisine.

So in half an hour, with five ingredients and a single small frying pan, you’ll get the perfect protein dinner. Serve with roasted broccoli (or steamed), different types of lettuce or cabbage salad (made with fresh or sauerkraut).

Crispy low-carb chicken with thyme

Servings per container: 4

Necessary:

  • 4 to 5 chicken drum bones and skin or 2 pairs of chicken breast
  • 2 tablespoons extra virgin olive oil
  • Sea salt and ground black pepper
  • About 400 g of cherry tomatoes
  • 5-6 fresh thyme branches
  • Optional: 1 lemon (Mayer type) cut into slices

Preparation:

Preheat the oven to 200 degrees Celsius.

Rub 1 tablespoon chicken oil, salt and pepper.

Heat a small saucepan (or a cast iron skillet) on a plate over medium heat and add the remaining oil. Fry the chicken on the skin for 15 minutes until the fat has melted.

Turn off the heat, add the tomatoes cut in half and mix with the fat released by the chicken. Rotate the chicken pieces so that the skin is facing up.

Arrange the lemon slices (if you decide to add this ingredient) and the thyme sprigs on top of the chicken, and place the pan in the oven. Bake for 20 minutes.

Serve with roasted (or steamed) broccoli, lettuce or cabbage salad.
